January 20th-24th, 2024 is Winter-Daikan (Greater cold)-70th KOU “Butterburs bud.”
The season has taken another step forward and we have entered DAIKAN (Greater cold), the coldest days of the winter (but today it is raining instead of snowing). And it is the time when butterbur sprouts start to appear.
It is a leadoff wild vegetable for coming early spring. The butterbur sprout TEMPURA that comes with SOBA noodle is delicious. Of course, the SOBA is from SHINSHU area. FUKI MISO (chopped butterbur sprouts stir-fried with MISO and oil) and SAKE are amazing together. You can enjoy the scent of early spring by scattering raw butterbur sprouts on top of MISO soup. For MISO, I definitely recommend SHINSHU products 😉
