Banners and posters advertising chilled Chinese noodles are now seen here and there. They make me feel that summer is approaching.
HIYASHI-CHUKA is a chilled Japanese dish with Chinese noodles and various toppings. Popular toppings for it are egg crape strips, cucumber, ham and tomato.
And the 24th KOU (May 31st – June 4th) was “Wheat ripens and is harvested.” Noodles made with freshly harvested wheat must be delicious.
ZARU-SOBA is a staple noodle in SHINSHU region, but HIYASHI-CHUKA is also a must-have at this time of year. It is a seasonal limited dish.
